My neighbor told me a story about growing up in Kerry in the 50's. Being poor, sometimes the only meat they could afford was pig's head. She said the only part she could bear was the pig's ear. I assume cheek, tongue brain etc were just too fatty or gristly.
Occasionally her dad would get slaughtering work with pigs, which he enjoyed. They would struggle and squeal. It was a good workout, I suppose.
Then one day the family were given a sheep around Xmas. The father came in after killing it and said he never wanted to touch another sheep again. There was no struggling or noise, it just accepted it placidly, more or less. It disturbed the man.
