Two words to completely blow that theory out of the water: medical professions.
Most hospitals in the western world cannot function without doctors working 70-hour weeks. These doctors earn chump change compared to the salaries they would get had they spent their college years doing software. Same with nurses, if they had become paralegals, they would work half the hours for better money. They all knew this before they chose these careers. And they chose them enthusiastically.
The world simply relies on this simple, everyday altruism. It can NOT be squared with selfishness. I don't doubt you have some dazzling display of sophistry which purports to reconcile this dissonance, but it will be like those mathematical 'proofs' that 2 plus 2 equals 5.
